Light Cucumber Dill Salad

This Light Cucumber Dill Salad is a perfect recipe for the summer! I found the idea for this recipe at Food Done Light. This dish is light, refreshing, and a cool treat for the summer months.

Here is what you'll need:
  • 1 ½ English cucumbers, thinly sliced (I used normal cucumbers)
  • 1 ½ tsp. salt
  • 2 Tbsp. rice wine vinegar
  • 2 Tbsp. light sour cream
  • 2 Tbsp. 2% fat Greek yogurt
  • 1 Tbsp. chopped fresh dill (I used dry dill)
  • ¼ tsp. black pepper 
Directions:
  1. Place the sliced cucumbers in a colander and sprinkle them with 1 tsp. salt. Let the cucumbers sit for 10 minutes. Rinse well and drain.
  2. Lay the cucumbers out on paper towels to dry.
  3. In another bowl, mix together the remaining ingredients. Stir in the cucumbers.
